The challenge proposed by the Serva brothers, Sandro and Maurizio was certainly huge: trying to conquer their patrons’ palates with one of the humblest of ingredients, freshwater fish, and using it to create tasty, refined and elegant dishes. Beyond Lazio’s traditional cuisine, beyond the average person’s taste and beyond common sense: the menu at La Trota dal ‘63 talks about an emotional, and highly courageous cuisine, based on consistences and temperatures with an eye on lightness. The siblings succeeded, their risk was rewarded, and today they are acknowledged throughout Italy as one of the most highly respected restaurants by critics and customers, alike. The colours of the Riserva Naturale dei Laghi are reflected in their dishes: from Tench soup to Carp crusted with poppy seeds, roasted Zite with smoked whitefish and artichoke chips, and Perch Pike cooked “sulla pelle”. The cuisine is complemented by careful, precise service and a wine list which boasts 800 Italian and French benchmark labels.
