From humble beginnings as a small trattoria in 1952, the gourmet inn that we know today, managed by the skilled hands of Gaetano Alia, has its own motto: “We build our future day by day, with the same enthusiasm and desire for all things new as on the first day.” Haute cuisine with produce from Calabria and an ongoing search for the finest raw materials are the fundamentals underlying that care and elegance afforded to wild vegetables, cold sausages, meats and cheeses from the Pollino National Park. The favourite ingredients often found in Gaetano’s kitchen include chickling peas, humble Mormanno beans and white Castrovillari beans. As regards desserts, Lucia Alia makes her guests dream with her delicious creations. During the winter, there is a warm welcome inside the inn, while in summer you cannot resist having dinner by the pool, surrounded by the greenery of the Pollino Park. The Chef’s mission also entails enhancing the wines of Calabria which, as he says, are not daunted by comparison with other Italian wines.
